Ingredients:
2 cups dry Asian dried mushrooms ( as cloud ear or silver tree ear)
1 cucumber
1 carrot
1 slice of quince
3 radishes
2 tbsp chopped spring onion
sesame oil, rice vinegar, soy sauce – on taste
Soak the mushrooms in cold water for an hour, wash and drain.
Cut the vegetables in strings and mix with mushrooms.
Season on taste.
It's tasty also with red bell pepper or soy bean sprouts.

Ingredients:
200 g flour
½ tsp ground cinnamon
½ tsp freshly grated nutmeg
1 tsp baking powder
1 tsp bicarbonate of soda
150 g muscovado sugar
100 ml grape seed oil
3 medium eggs
225 g grated carrots
50 g walnuts or hazelnuts, baked
2 tbsp freshly grated orange peel (optional)
50 g raisins (optional)
For the icing:
300 g mascarpone cheese
200 g soured cream or smetana
2 tbsp grated carrots
2 tbsp freshly grated orange peel
3-4 tbsp icing sugar
Preheat the oven to 150°C / 300°F.
Mix the dry ingredients together.
Lightly whisk the oil and eggs together.
Add to flour mixture and stir well.
